The RESTAURANT procures local foods WHENEVER possible. we FEATURE a repertoire of ethnic ingredients and recipes. the majority of PURCHASES will be from the chef's recommendation. ethnic receipts will be used to provide the customers with a diverse unique menu. our chef will have great latitude in designing and producing menu offerings from many different cultures. we will endeavor to procure all the traditional, authentic ingredients necessary to hold true to these varied and interesting cultural recipes. we will also redesign some traditional dishes with new and more sustainable ingredients.
